So let me preface this by saying I did not measure anything, these are estimates!
1.5 lbs of Ground Turkey
2 Egg Whites
2 T of 21 Day Fix Mediterranean Seasoning Mix
1/3 C of Feta
1/4 C of dry Quinoa
1/4 C of Whole Wheat Flour
1 T of Lemon Juice
1 C of Greek Low Fat Yogurt
1 t of garlic powder (adjust to your liking)
Cracked Black Pepper
1.5 t of Lemon Juice (adjust to your liking)
I topped off the meatballs with some sauce, a slice of cucumber, and a slice of tomato. It was served with plain cooked spinach.
As I sit back and reflect on the past week, I realized that I really need to get myself back on track with eating. Have you ever felt this way? Holidays always throw me off my game because I have a hard time throwing out perfectly good food. One of the ways that I help myself not get terribly out of control, is to make better options for appetizers and sides. For example, I decided to make a cleaner version of spinach artichoke dip, with cauliflower puree as the base instead of sour cream or mayonnaise, or whatever is used to typically make spinach artichoke dip. I also made a greek yogurt dip for fresh fruit, and put out hummus with fresh cut veggies. As a side dish I made clean sweet potato home fries. I also planned to make green beans with almonds but never got around to it. The other way I try to keep myself in check on holidays is to watch my portions. Don't let me kid you, I partake in dessert and the traditional ham, but I keep control of the amount of food eaten.
Now, the tough part is getting back on track. So, as I start my next challenge I am going back to eating as clean as possible. Clean eating is a lifestyle not a fad or diet. It is fueling your body with the good stuff to get you through daily activities and workouts. So who is ready to take this journey with me and get ready for summer?

Here is my meal plan for the week, what is yours?
First I would like to thank all of my customers for their orders in the month of March. I decided to donate a percentage of my commissions to the Mario Lemieux Foundation, and we were able to raise $170 for the Foundation in honor of my Coach Katy who is battling Lymphoma. Once the team tallies the amount donated, I will report the final numbers.
As for my journey, I am happy to report that I do not need Chemotherapy or Radiation. My prognosis is good, and I will be closely monitored for recurrance (my rate is 30-40%). Every three months I will have a series of tests to be sure that Sarcoma does not return.

Growing your own garden.
Now that we are into spring, it is time to get those seeds planted. Growing up we never grew anything. However, when I got married, I learned how to care for vegetables. My husband grew up on 100 acres, and his family grew much of their own fruits and veggies. They canned and froze much of their produce to make their harvest last through the year. While I would love to do this, I live on .22 acres, and much of that is black top. However, I do like to grow some tomatoes, peppers, greens, garlic and herbs. There is nothing better than growing your own food and benefiting from the fruits of your labor.
Since I have young children we go through milk like crazy and I have been collecting their milk containers. The bottom of the containers are lined with rocks, to allow for drainage. The soild was then placed on top, and then I planted the seeds. So far I have sprouts from the spinach, basil, and parsley. Please I urge you to grow your own basil, it is so easy and so cheap compared to the store. Basil freezes very well too!
