You know I have made every excuse in the book for myself at one point or another. It is very easy to put yourself down, and say, well I am not going to even try because I can't do it. No matter what it is in life, we somehow give credit to our doubts, fears, and what other people think. We need to stop, and start believing in ourselves, and know that we are capable of anything we put our mind to. Trust me it might not be pretty in the beginning, and it will be difficult, but once you get over the hump, you will feel accomplished, proud, and confident, it what ever it is you seek. So my challenge to you is not to give up, because know that you can. If people don't believe in you, so what and believe in yourself. Find people who are only going to lift you higher and not put you down! This quote from none other than Rocky Balboa, is so true!
Need a little help figuring out a meal plan for the week, here is mine. It is nothing fancy, but helps me stay on track with my eating. Planning out my meals helps me remain on track during the holiday season. I am not claiming to be perfect, as I know there will be cookies mixed in there, to be totally honest, but I making sure that I am fueling my body for my workouts, and providing it with necessary nutrition.
I have been doing a bible reading plan on rediscovering Christmas in a group that I belong to with Moms, Aspiring Moms, and Expecting Moms. I really like this plan because if focuses on the true reason for the season, Jesus Christ. This week one of the devotion topics was about Christmas Cards. For me it definitely reminded me how commercialized this season has become, and how we have lost that personal touch with many things in life. In years past we would hand write Christmas Cards, and now we just take a few pictures, arrange in them in a collage and put it in a template. Not much thought is put into it. People enjoy the family pictures, yes, but we have lost the personal touch. So I am challenging myself, and others to be sure to let those closest to you know how you feel! MERRY CHRISTMAS!

Earlier this week a friend pointed out to me an article about mothers talking with their daughters about the importance of fitness. I really spoke to me because my journey for health and fitness began because I just did not feel good about myself. Being healthy and fit isn't about looking good in a bikini, because the reality is that it will never happen. My children stretched my skin so much that it isn't going back, so I just have some extra skin hanging there. However, the confidence I have in myself, and how I feel inside and out speaks volumes of my transformation. I hope I inspire you to take small steps towards a better and healthier you. It is not about dropping weight quickly, it is about a lifestyle. So if you are looking to get started because you want to look great for a special day or the summer, great, but I promise you will get so much more out of it, than just what you look like on the outside! This is a great recipe to get a variety of nutrients in one meal. Chili is one of my favorite comfort foods and I have tried multiple healthy recipes. Here is just another unique take on this American classic. This recipe was taken and modified from: http://www.unconventionalkitchen.com/pumpkin-chili/
1 lb of Ground Turkey
1 tablespoon olive oil
1 onion, chopped
1 red pepper chopped (or more I like my chili chunky)
2 teaspoons minced garlic (3-4 cloves chopped)
1 tablespoon cumin
1 tablespoon chili powder
1 cup broth (chicken or vegetable)
1 can pumpkin puree (fresh- or canned make sure it is PLAIN pumpkin not pumpkin pie filling)
1 can black beans (rinsed and drained)
1 can of red kidney beans
1 can diced tomatoes (14 ounce)
1 can of Tomato Sauce
1 cup of frozen corn
couple of liberal dashes of salt (to your liking) and pepper
1. In a medium pan, add your oil and heat it up. (you know the pan is hot enough if your onions sizzle a little bit when they hit the oil)
2. Brown Turkey.
3. Add the onions and saute until tender, about 5-7 minutes.
4. To the onions add the red pepper,garlic,cumin, chili powder, salt and pepper and saute the spices until you can smell them, about a minute.
5. To the pot add the broth, pumpkin puree, black beans, tomatoes and cook on low for 20-30 minutes. I like to eat it chunky just like this, but the original recipe he pureed it all. If your kids are picky that might be the way to go. Either way it is really good.
I made some adjustments to this recipe as mine was too soupy. In my first try I used 2 cups of broth, so to make it more chunky reduce it to one cup of broth, as listed above.
