Before marriage I was a city girl through and through! We never grew anything, actually we killed any plants that came our way. Let's just say instead of a green thumb we had the kiss of death when it came to plants. However, when I married Matt, we moved to his grandparent's old house next to his parent's house that sat on about 100 acres of land. So growing up Matt and his family grew their own produce and canned or froze much of the food for the winter months. I am so thankful to my mother & father-in-law for showing me how to grow my own produce and can and freeze that food for later use. Since we live in a development now we are unable to grow large amounts of vegetables to can, but we try to grow enough to cover every day use.
There is so much to be said about growing your own food. First, you know exactly where it came from and how it was treated for pests and disease. There is also a sense of pride when growing your own produce. So where am I going with all of this? Well I tried a new recipe using the produce that ready to eat. If you grow your own produce, you know that when it starts to be ready to pick, it comes all at once, which is why you can. So today's featured recipe is something new that is husband (Matt) approved, clean, and healthy!
Quinoa Chicken Caprese Bake
2 Cups of Sauce (This is sauce I canned last year)
2 Cups of Mozzerella
1 Cup of Dry Quinoa
4 Medium Tomatoes Diced
2 Handfuls of Fresh Basil
2 Tablespoons of Balsamic Vinegar
2 Chicken Breasts
Cook the Quinoa according to the instructions on the box or bag. Boil chicken. While the quinoa & chicken are cooking clean and chop up tomatoes and basil. Put them in a bowl with the balsamic vinegar. When quinoa is finished put in the tomato/basil mixture bowl and mix. When chicken is done, shred, or I used a mini food processor because it is faster. Mix the chicken with the tomato/basil/quinoa with 1/2 cup of sauce. Place the mixture in a pan, I think mine was an 8X8 or 9X9. Top with remainder of the sauce, and then the cheese. Bake at 375 for 20 minutes. Enjoy!
Today is a day of reflection for me. Today I ran my first 5K ever. This might be surprising to some people but those close to me know how much I despise long distance running. One year ago I would have never participated in such an event, but my friend and coach Katy Ursta talked me into buying a T25 challenge pack through Team Beachbody. At first I was skeptical of Shakeology, however, it was a requirement to be a part of her support and accountability group. I was ready to change my life so I agreed to buying the workouts and Shakeology. Let's just say I am hooked! Beachbody completely transformed my life from the tired and sluggish mom of 2 young boys to an energetic and fit mom of two very outgoing toddlers. I truly believe in beach body and the products that they provide.
Since the beginning of my journey with T 25 I have tried a variety of other programs such as Turbo Fire, P90X3, the 21 Day Fix, Les Mills Combat, Brazilian Butt Lift, and now I am currently using the newest program PiYo. Beachbody has helped me get in the best shape of my life. I truly believe that my journey with beach body has played a vital role in my ability to overcome Sarcoma. Had I not lost the weight in my T25 challenge, I may have never noticed the lump on my arm which turned out to be cancerous. I thank God that we caught it so early and then it was able to be removed completely with two surgeries. Chemotherapy nor radiation was required and I am happy to report that I am 4 1/2 months clean of this cancer.
Today marks a huge day because I completed the 5K for the cure for Sarcoma. Sarcoma is a rare cancer that can affect anyone young or old, healthy or not healthy, it has no rules or boundries. I am blessed to have such wonderful Doctors, Dr. Tawbi and Dr. Weiss, who dedicate their lives to finding a cure. I am so happy to say that our team was able to raise $2,400 towards finding a cure! All donations are for research and finding a cure for Sarcoma. I just want to thank everybody who participated and donated to this cause. Thank you!
This is a great dinner that the whole family loved! My 1 year old ate an entire piece himself! Again, I stress that I am not a measurer! These are all guestimates. I am somewhat old school when it comes to cooking, I just throw stuff together. This was just delicious and packed with good stuff.
Brown the ground beef and drain the grease. Spray the pan with olive oil and add the garlic. After 2 minutes add the remainder of the veggies, except for the zucchini. Then add a handful of fresh basil chopped. In a bowl mix 1 egg and add about 16 oz of part skim ricotta cheese. Mix in parmesan, garlic powder, pepper, salt, & parsley with the cheese and egg mixture. Add the beef and cheese mixture to the cooking veggies. Spray a 9x13 dish with nonstick spray, then add a layer of thinly sliced zucchini. Put half of the meat, cheese, and veggie mixture on top of the zucchini. Add a layer of sauce and repeat. Then top off with a layer of zucchini and the mozzerella cheese. Bake at 350 covered for 1 hour.
Caution: It came out pretty watery, so you may want to cook the veggies a little longer to evaporate the water, or cook uncovered and add the cheese the last 10 minutes. I just used a baster to suck out the water once a couple of pieces were removed.
Today's post is inspired by the events of life. Today was just one of those days, so as my children nap I am trying to relax and and reflect a little on life. I am not a detailed planner and I never have been. My husband is the polar opposite, to the point where he has the nickname Mr. Itinerary! I grew up with a house full of people, and as the oldest of 5 girls it was hard to plan and get out the door on time. So I never felt the need to plan everyday life because plans were always changing. I am finding that my laid back attitude on life helps me to cope with the craziness of having two young boys close in age.
So let's talk real life. Spilled milk, pee on the floor (potty training), leaking diapers, spilled snacks, therapy, colds, toys everywhere, and overall chaos. I am a stay at home mom and a wife, and I will atest that there is never a dull moment. There is always something to do, and when you think, wow I have everything under control for once, something happens that throws you right back into chaos. Recently, I have found that sometimes no matter how much chaos there is or how much needs done, it can wait because your whole world can change in an instant, and I will elaborate later in this blog.
So why am I talking about all of this on my blog. Well to prove life is not perfect and life is hectic. My health and fitness journey is not flawless, and that is why I am constantly working to better my health. Of course I have my break downs, where chocolate or a glass of wine is desparately needed (today was chocolate cake). However, I have realized how important it is for me to be healthy and fit. Beachbody has allowed me to get in the best shape of my life. All while balancing the crazy schedules of my young boys and working from home part time. When my coach introduced me to Beachbody, it was an easy decision to join. I did not have the time to go to the gym or the know how to be effective in my workouts. Also, I did not want to have to pay a trainer to hold me accountable, like my coach does for me. So in just 25 minutes a day working out, drinking Shakeology, and practicing clean eating (which I learned from my coach) transformed my life.
This transformation, has made me a better mom and wife. How? Well I have more energy and feel better about myself. As many of you know, if you do not feel good about yourself, it is hard to live life fully, and those around you are affected. Joining Beachbody and transforming my life has given me confidence. That confidence has allowed me to inspire, motivate, and impact others lives. My journey is never ending, and my transformation is never final. Life's events can throw you off your game some days, and guess what, it happens; but it is how you bounce back that makes the difference in your journey.
My life is by no means perfect, it is crazy, it is chaotic, and I am real. You never know what life is going to throw your way, so how you react is what defines your journey. I have definitely been humbled in the past year, through life events. In the past 13 months, we have endured challenges as a family that many people do not experience in a life time. When our second son was born he contracted menengitis, and was hospitalized for 2 weeks. This was a very scary and emotional time for my husband and I. Additionally, our son Justin really struggled with anxiety because of our absence due to attending to Luke. In the fall Justin was tested and it was revealed that he had some speech problems and has 3 sessions of therapy a week. Our latest adventure was my personal battle with sarcoma. So, life does throw curve balls at you, and nothing is perfect.
So to end this blog, I just want to say I am not perfect. I only try to lead by being the best example possible, while being real. This allows me to help others achieve something that is so vital to life, and that is health. If you are ready to start your journey, or just get more serious about it, I am here to support you. There is nothing you can't do if you put you mind to it, and put in a little effort. Your health is so important to those around you. Because of decision to get healthy, I stand here today sarcoma free, as far as we know. Take your life back and get serious about your health. As parents we put our kids first and many times we let our health go by the wayside. Let me ask you, if you continue to live your life as is, are you able going to be able to actively interact with your energetic children? Or if your health is in serious jeopardy, will you be around to watch your children graduate high school, get married, and have children of their own. When you think about it this way, caring for yourself makes you a better parent. You do not need to make a huge commitment, just 30 minutes a day and you can transform your life!
