After a long week, I decided to change the direction of my blog. Yes, I am still a Beachbody coach and I will be posting recipes and fitness information, but I am going to start blogging more about everyday life and how family and faith shape me. So I hope you all had a wonderful weekend and please feel free to share my blog with others that would connect with me as a wife, mom, cancer survivor, or health and fitness junkie. Through my blog I hope to touch people's lives in one way or another, through encouragement, awareness or any way that I can.
Fun & Easy Breakfast Recipe that was a HIT!
Clean Apple Cinnamon Pancakes
1 Qt Bag of sliced apples (last year's crop frozen)
3 tsp of Cinnamon
1 tsp of Baking Powder
2 T of Honey
1 tsp of Vanilla
1 Cup Oat Flour (milled from regular oatmeal)
1/2 Plain Nonfat Greek Yogurt
1/8 Cup Almond Milk
4 Egg Whites
2 T of Coconut Oil
Cook apples in coconut oil with honey and 2 of 3 tsp of cinnamon. While cooking mill the flour. Once cooked, take about a cup of the apples and put them in the blender. Let the applesauce cool a little before adding the other ingredients. Add all the liquids and blend. Then add the dry ingredients and blend. Pour over the remaining apples in the pan and cook. Flip the massive pancake the best you can and cook through. While this wasn't pretty it was good. If you are looking for presentation, you may just want to bake in the oven.
Well here we are the official end of summer as far as I am concerned. Today is the last day pools are open and the days are starting to get significantly shorter. I hope you all have had the chance to enjoy the holiday weekend. As this weekend comes to a close, everyone is prepping to get back to work as usual. However, tomorrow starts a new era in my life, as my oldest is beginning pre-school. I have mixed emotions about this life event. I am excited for him to get out and play with other children, and learn from others, but I am sad that my little man is growing up. I worry about the challenges and struggles that lie ahead for Justin. He is slightly delayed with his speech and it can be very difficult to understand him. I worry that he is going to struggle in his new school and I worry about him disrupting the learning of other children. Although he has made great strides I worry about his future, and how he will do in school. As an educator myself, I stress about his success in education. While he does not have a severe disability or a medical diagnosis, he is behind in his speech and language skills. The last year has been filled with ups and downs with Justin, but we have a plan of action for the school year that gives me comfort. I just hope that this year he grows and can learn to interact with his peers appropriately. As of now he does not know that he is a little different from the average child, and I hope before he realizes this that he can get caught up. I am hopeful that the interaction with other students, 2 private speech therapy sessions a week, and push in once a week with a speech therapist, will improve his speech and language skills. So here is to new beginnings!
