Portabella Tuna Melt
4 Portabella mushroom caps
2 cans of tuna packed in water
1/2 avocado or 2 T of guacamole
2 T of minced onion
2 T of Lemon Juice
1 T dried parsley
1 T of Dijon mustard
1 t of Olive Oil
1/2 Garlic Powder
4 Tomato Slices
Shredded Mozzarella Cheese
Dash of pepper
Place portabella caps smooth side down on a baking sheet and brush evenly with oil. Bake for 20-22 minutes and turn after 10 minutes.
Mix all the other ingredients in a bowl. Top each mushroom evenly, place tomato, and then cheese on top. Bake for an additional 3-5 minutes and enjoy!
