Winner, Winner, Chicken Dinner!

Buffalo Chicken Quinoa Salad
This recipe is definitely is enough for 4 but more like 6
 
Ingredients
  • 1 C. quinoa
  • 2 C. water
  • 2 Chicken Breast that I boiled and then shredded
  • 1/4 cup of EVOO (Extra Virgin Olive Oil)
  • 3/4 Cup of Franks Red Hot
  • 2 C. cabbage/carrot slaw mix
  • 1 Bag of Frozen chopped broccoli - Steamed
  • 1/4 large onion
  • Mozzarella Cheese

Instructions
  1. In a medium saucepan, bring the quinoa to a boil in two cups of water. Cover, and simmer on low for 20 minutes. Remove and fluff. Meanwhile, boil chicken in a pot. 
  2. In a skillet heat up oil and hot sauce.  Add shredded chicken, steamed broccoli, and quinoa.
  3. Put a layer of shredded cabbage and carrots on your plate, and top with chicken mixture, and then sprinkle some mozzarella cheese on top.

Some tips about this recipe, it is spicy, so next time I may cool it down by adding celery to the veggie mix, and a little less Red Hot, and some greek yogurt to add some creaminess.  These are just some options, if you try and like adjustments, please let me know!  Other than the heat this is delicious and nutritions.  It is high in protein, it has good fats, and a great mix of veggies with the cabbage, broccoli, carrots, and onions.  This is a great way to sneak in some veggies for kids, if you tone down the heat!
